Asparagus Pesto with Pasta

Asparagus Pesto with Pasta

A while ago I got together with Heidi Swanson of 101 Cookbooks to try out one of the recipes from her cookbook, Super Natural Cooking. The recipe we selected is perfect for spring, a pesto made with blanched asparagus, baby spinach, pine nuts, Parmesan, garlic and olive oil, tossed with a mix of egg and green spinach noodles. Heidi calls this recipe “Straw and Hay Fettuccine Tangle, with Spring Asparagus Purée” in her book, a nod to the mixing up of different colors of noodles. The asparagus pesto would work with any pasta or even as a sauce for pizza or potatoes.

  • Prep time: 10 minutes
  • Cook time: 30 minutes
  • Yield: Serves 4 to 6

Ingredients

  • 1 bunch asparagus spears (about 1 lb), trimmed of tough ends and halved crosswise
  • 3 handfuls baby spinach leaves
  • 2 cloves garlic, peeled
  • 1 cup freshly grated Parmesan cheese, plus more for topping
  • 1 cup pine nuts
  • 1/4 cup extra-virgin olive oil, plus more for topping
  • Juice of 1/2 lemon
  • 1/2 teaspoon fine-grain sea salt
  • 8 ounces of dried pasta or 12 ounces fresh -linguini, fettuccine, spaghetti
Mix spinach pasta with regular wheat pasta for a medley of colors.

1 Bring 2 pots of water to a rolling boil, one large for the pasta and one medium sized for the asparagus.

2 While the water is heating, put the pine nuts in a single layer in a large skillet. Heat on medium heat, stirring occasionally, until fragrant and lightly browned. Remove pine nuts from pan and set aside. You will use 3/4 cup of the pine nuts for the pesto paste and 1/4 cup to mix in whole.

3 Salt the asparagus water and drop the spears into the pan. Cook for only 2 or 3 minutes, until the spears are bright green and barely tender. Drain under cool water to stop the cooking. Cut the tips off, and set aside, several of the asparagus (diagonal cut about an inch from the end) to use for garnish.

4 Add the asparagus, spinach, garlic, Parmesan, and 3/4 cup of the pine nuts to a food processor. Purée and, with the motor running, drizzle in the 1/4 cup of olive oil until a paste forms. If too thick, thin it with a bit of the pasta water. Add the lemon juice and salt, taste and adjust seasoning.

Here's a trick that Heidi taught me. When emptying the food processor bowl of its contents, hold the bottom of the bowl with one hand with a finger in the center hole, holding the blade in place and keeping it from falling out.

This fresh pasta cooked up in no time at all.
5 Salt the pasta water well and cook the pasta until just tender. Check the directions on the pasta package. You'll need more time for dried pasta and less for fresh. Drain and toss immediately with 1 cup of the asparagus pesto.
Serve sprinkled with the remaining 1/4 cup toasted pine nuts, a dusting of Parmesan, and a light drizzle of olive oil.

Arugula Pesto

Arugula Pesto

Print
We have a 3 ft by 6 ft patch of arugula growing in our garden and for the last two months I’ve been looking for ways to make use of it. By the way, arugula (a.k.a. rocket) grows like a weed and re-seeds itself every year. The bugs and snails don’t seem to touch it (they go for the lettuce instead). I had heard that walnuts are good in pesto so I tried making the arugula pesto both ways – one with pine nuts and one with walnuts. I think the arugula pesto with walnuts is better. The strong, meaty flavor of the walnuts balances out the astringency of the arugula, a good blend of flavors. I’ve made pesto both with mortar and pestle and with a food processor. The food processor method is definitely easier but the mortar method produces larger pieces of the arugula.
I prefer a mild garlic flavor that you can achieve by using roasted garlic. The 1/2 raw garlic clove is added for a little kicker. The first time I made this pesto it was with only raw garlic and it was a little overwhelmingly garlicy. Using roasted garlic is a great way to still have the garlic flavor but without the intensity.

Arugula Pesto Recipe

  • Yield: Makes 1 heaping cup.

Ingredients

  • 2 cups of packed arugula leaves, stems removed
  • 1/2 cup of shelled walnuts
  • 1/2 cup fresh Parmesan cheese
  • 1/2 cup extra virgin olive oil
  • 6 garlic cloves, unpeeled
  • 1/2 garlic clove peeled and minced
  • 1/2 teaspoon salt

Method

1 Brown 6 garlic cloves with their peels on in a skillet over medium high heat until the garlic is lightly browned in places, about 10 minutes. Remove the garlic from the pan, cool, and remove the skins.
2 Toast the nuts in a pan over medium heat until lightly brown, or heat in a microwave on high heat for a minute or two until you get that roasted flavor. In our microwave it takes 2 minutes.
3a Food processor method (the fast way): Combine the arugula, salt, walnuts, roasted and raw garlic into a food processor. Pulse while drizzling the olive oil into the processor. Remove the mixture from the processor and put it into a bowl. Stir in the Parmesan cheese.
3b Mortar and pestle method: Combine the nuts, salt and garlic in a mortar. With the pestle, grind until smooth. Add the cheese and olive oil, grind again until smooth. Finely chop the arugula and add it to the mortar. Grind up with the other ingredients until smooth.
Because the pesto is so dependent on the individual ingredients, and the strength of the ingredients depends on the season or variety, test it and add more of the ingredients to taste.
Serve with pasta, over freshly roasted potatoes, or as a sauce for pizza.

Method

The first step is done – your amazing veg and giblet trivet from roasting the turkey. Start by angling the tray and using a spoon to skim away about three-quarters of the excess fat (you can keep this for another day).

Place the tray on a medium heat on the hob and stir in the flour with a wooden spoon, scraping up all the sticky bits from the base and sides of the tray.

Once all combined, pour in the stock, or you can even use cooking water you’ve saved from your veggies. Bring to the boil, then leave to simmer gently for about 30 minutes, or as long as it needs to get to the consistency you desire. As it simmers, if any fat or foam rises to the surface, simply skim it away.

If you want to add extra flavour, a swig of red wine, vin santo, sherry or port will work a treat. I also like to add a spoonful of jam or jelly for a touch of sweetness.

When you’ve reached the consistency you want, pour the gravy through a coarse sieve into a saucepan, pushing all that goodness through with the back of a ladle, then keep warm over a low heat until you’re ready to serve.

Hellman’s £10m Summer Campaign to Push New Premium Sauces

Hellman’s is set to launch its largest ever summer campaign after investing £10m in a push to support its new, premium range of BBQ and Hot Sauces.

Called ‘Grilltopia’ the campaign is set to break in May and aims to drive association of Hellman’s mayonnaise offering with BBQ and grilling occasions over the summer, with activity planned to run across TV, digital, out-of-home (OOH) and PR.

The new range from the Unilever-owned brand comprises four Grilling sauces, three Hot & Spicy sauces and three Smooth & Creamy sauces.

In a bid to drive consumption of the new range, each variant has been paired with a specific food, which will be highlighted on pack and instore via on shelf POS (point-of-sale) to educate shoppers on how the sauces can be used in a variety of ways, such as glaze, pour, marinade and dip.

Hellman’s claims this is a first for the category, and predicts the food pairing tactic will “explode growth and revolutionise the way consumers shop within the segment”.

Hannah Webb, brand manager for Hellmann’s, commented: “With summer fast approaching, we cannot wait to offer barbecue-lovers and grillmasters a brand new range of premium and contemporary sauces to use alongside their favourite mayonnaise. Our new range of BBQ and Hot Sauces will introduce a global palate to the UK BBQ occasion with delicious and eclectic flavours inspired by food cultures from around the world that are sure to excite British consumers and mayonnaise fans alike.”

The range will be available in retail outlets from April.
